This homemade Blueberry Syrup is wonderfully fruity, perfectly sweet, and absolutely irresistible! An incredibly easy recipe, it’s made with just 5 simple ingredients and comes together in less than 15 minutes. It’s the ideal versatile topping for yogurt, ice cream, pancakes, waffles, and so much more, bringing a burst of fresh berry flavor to any dish you choose to enhance.

Ingredients

  • 1 ½ cups fresh or frozen blueberries
  • ½ cup water
  • ⅓ cup granulated sugar (adjust to your taste)
  • 1 tablespoon cornstarch
  • ½ – 1 tablespoon fresh lemon juice*

Instructions

  1. In a small saucepan over medium heat, combine the blueberries, water, and sugar. Stir gently to combine all ingredients and bring the mixture to a gentle simmer. Reduce the heat to low and continue to cook for approximately 4 minutes, or until the blueberries begin to soften, burst, and release their vibrant juices.
  2. In a separate small bowl, whisk together the fresh lemon juice and cornstarch until a completely smooth slurry forms, ensuring there are no lumps. Slowly pour this lemon-cornstarch mixture into the simmering saucepan of blueberries, stirring continuously and thoroughly to incorporate it evenly.
  3. Continue to cook the syrup over low heat, stirring often, for an additional 3-4 minutes. You will observe the mixture thickening considerably as the cornstarch activates. If you prefer an even thicker syrup, you can cook it for another minute or two, stirring constantly, until it reaches your desired consistency.
  4. Remove the saucepan from the heat. Your homemade blueberry syrup is now ready! Serve it warm or at room temperature. Enjoy it as-is with delicious blueberry pieces for texture, or blend the mixture for a perfectly smooth sauce if that is your preference.

Notes

*You have the option to substitute the fresh lemon juice with 1 teaspoon of vanilla extract for a warmer, more aromatic flavor profile. However, for optimal taste balance, it is generally not recommended to use both lemon juice and vanilla extract together in this recipe.
