It’s incredibly flavorful, wonderfully juicy, and remarkably simple to prepare, making it a perfect weeknight meal option.
A key ingredient in achieving this fantastic texture is super-firm tofu. If you haven’t yet discovered the magic of super-firm tofu, now is the time! It’s become my go-to choice for almost all tofu recipes because of its dense consistency and ability to absorb flavors beautifully. I often find it at Trader Joe’s for a great price, but it’s increasingly available in the produce or refrigerated sections of most major grocery stores. Its firm nature means less pressing is required, streamlining your cooking process.

Essential Ingredients for Your Street Corn Tofu Bowls
To create these incredibly flavorful Vegetarian Street Corn Tofu Bowls, you’ll need a selection of fresh produce and pantry staples. While the full list of precise measurements is detailed in the recipe card below, let’s explore the key components and discuss some flexible substitutions to suit your preferences and what you have on hand.
- Sweet Potatoes: These naturally sweet and vibrant root vegetables form a hearty and delicious base for our bowls. Cubed sweet potatoes are tossed with a touch of cornstarch, olive oil, and savory taco seasoning, then roasted until tender on the inside and beautifully crisp on the edges. The cornstarch is our secret weapon for achieving that desirable crispy texture.
- Super Firm Tofu: The star of our plant-based “meat.” While super firm tofu is highly recommended for its excellent texture and minimal water content, extra-firm tofu also works wonderfully. The tofu is shredded to mimic ground meat, then sautéed until golden and infused with a rich, savory sauce that transforms it into an authentic-tasting taco “beef” substitute. This versatile protein is fantastic for absorbing all the bold Mexican flavors.
- Mexican Street Corn Salad (Esquites): This creamy, tangy, and slightly spicy corn salad is the heart of the “street corn” experience. For this recipe, we’ve simplified and halved my original esquites recipe for convenience. However, for an even richer flavor and delicious leftovers, I highly encourage you to click through to the original recipe and prepare a full batch. Its vibrant flavors and creamy texture are truly addictive.
- Cotija Cheese: A traditional Mexican cheese that adds a salty, crumbly, and slightly tangy dimension to the street corn salad. Don’t be shy – I always recommend having extra on hand for a generous sprinkle over the finished bowls, enhancing both flavor and presentation.
- Fresh Cilantro: A crucial herb for brightness and a burst of fresh flavor. Chopped cilantro is used as a garnish for the assembled bowls, adding a refreshing contrast to the rich and savory components. If you’re not a fan of cilantro, you can certainly omit it or substitute with chopped green onions or parsley.
- Ripe Avocado: Essential for serving! Sliced or diced avocado adds a layer of creamy richness, healthy fats, and a cool contrast to the warm, spicy elements of the bowl. Its smooth texture and mild flavor perfectly complement the other ingredients.
These ingredients come together to create a harmonious and unforgettable meal. Be sure to check the recipe card for exact quantities and any additional small but impactful seasonings and sauces that bring these bowls to life!

Expert Tips for Crafting Perfect Street Corn Tofu Bowls
Achieving the best possible flavor and texture in your Street Corn Tofu Bowls is easy with these insider tips. Pay attention to these key steps for truly outstanding results:
- Shredding vs. Cubing Tofu: For a remarkably authentic “taco meat” texture, always opt to shred your tofu using the large side of a box grater. This method creates irregular pieces that brown beautifully and absorb sauce more effectively than uniform cubes, mimicking ground meat much more closely.
- Achieve Golden, Dry Tofu: Patience is key when cooking the shredded tofu. Allow it to sauté long enough in the pan to release its moisture and develop a beautiful golden-brown crispness before you add the sauce. This drying step prevents the tofu from becoming soggy and enhances its ability to absorb the rich flavors of the taco sauce. Don’t rush this process; it’s essential for texture.
- The Magic of Cornstarch on Sweet Potatoes: Do not skip coating your sweet potatoes with cornstarch! This seemingly small step is crucial for achieving those coveted crispy edges and a delightful caramelized exterior when roasting. The cornstarch creates a thin, crunchy crust, elevating the texture of the sweet potatoes from merely tender to irresistibly crisp.
- Season Your Street Corn to Perfection: Always taste your Mexican street corn salad before serving and adjust the seasoning as needed. Depending on the sweetness of your corn and the saltiness of your cotija, you might want to add an extra squeeze of fresh lime juice for brightness or a pinch more salt to enhance the overall flavor. Balancing these elements is key to a truly vibrant esquites.
- Address Wet Tofu Promptly: If, after sautéing for the recommended time, your tofu still feels wet or hasn’t achieved that desired golden crisp, simply continue cooking it for a few extra minutes. High heat helps evaporate moisture, so make sure your pan is hot. This ensures your tofu “meat” has the perfect, satisfying chew.

- 15 oz extra firm tofu, Super firm tofu also works great!
- 1 tablespoon olive oil, divided
- 2 ½ tablespoons taco seasoning
- 3 tablespoons of your favorite salsa
- 1 teaspoon vegetarian beef bouillon*
- 1 ½ tablespoons soy sauce
- ⅓ cup water
- 2 tablespoons tomato paste
For the Mexican Street Corn Salad:
- 15 oz can of corn*
- 1 tablespoon sour cream, or ideally, Crema Mexican Agria Sour Cream
- 1 tablespoon mayonnaise
- 1 large clove garlic, minced
- ¼ teaspoon fine sea salt
- Juice and zest of ½ a lime
- ¼ teaspoon chipotle chili powder, regular works as well
- ½ bell pepper, finely diced*
- 1 small jalapeno, finely diced (remove the seeds as desired)
- 2-3 tablespoons cotija cheese, crumbled
- 2-3 tablespoons cilantro, chopped
For serving:
- ½ avocado, sliced or diced
- handful of cilantro chopped
Instructions
For the sweet potato:
- Preheat the oven to 425 degrees F (220°C).
- On a large baking tray, toss the cubed sweet potato with the olive oil, salt + pepper, and taco seasoning. Spread them in an even layer to ensure even cooking and crisping. Roast for approximately 25 minutes, making sure to toss them halfway through the cooking time, until they are beautifully fork-tender and lightly caramelized.
For the tofu “meat”:
- Using the large side of a box grater, carefully shred the block of tofu. Don’t worry if a few larger chunks fall off; you can gently press them through the grater as well to achieve a consistent, ground-meat-like texture.
- In a large skillet, heat ½ tablespoon of olive oil over medium-high heat. Once hot, add the shredded tofu and cook, stirring every couple of minutes, for about 10 minutes. The goal is for the tofu to turn a rich golden-brown color and for most of its moisture to cook out, creating a crisp and flavorful texture.
- Meanwhile, prepare the savory sauce. In a small bowl, whisk together the remaining ½ tablespoon of olive oil, taco seasoning, your favorite salsa, vegetarian beef bouillon, soy sauce, water, and tomato paste until thoroughly combined. Once the tofu has achieved its golden crispness, pour in the prepared sauce. Stir well to coat all the tofu evenly and cook for an additional 2 minutes, allowing the flavors to meld and the sauce to thicken slightly.
For the street corn:
- Begin by making the creamy dressing for the street corn. In a medium bowl, stir together the sour cream (or Mexican crema), mayonnaise, minced garlic, fine sea salt, fresh lime zest and juice, and chipotle chili powder until the sauce is smooth and well-combined.
- In a large mixing bowl, combine the drained corn, finely diced bell pepper, finely diced jalapeno (remember to remove seeds for less heat if desired), fresh chopped cilantro, and crumbled cotija cheese. Pour the prepared cream sauce over these ingredients and toss everything gently but thoroughly until all the corn and vegetables are beautifully coated in the tangy, rich sauce.
Assemble:
- To assemble your delicious bowls, divide the prepared tofu “beef,” roasted sweet potato, and vibrant Mexican street corn salad evenly among two bowls. Top each bowl with slices or dices of fresh avocado and a final sprinkle of chopped cilantro for garnish. Serve immediately and savor the incredible fusion of flavors and textures! ENJOY!
Notes
- Corn Alternatives: While canned corn is convenient, feel free to use 2 ears of freshly cooked corn (kernels cut off the cob) or 15 oz of frozen corn, thawed and drained well, for a slightly different texture and sweetness.
- Bell Pepper: The recipe calls for ½ a bell pepper. If you prefer not to have a leftover half, you can certainly omit it entirely, or dice the whole pepper and add it for extra crunch and color.
- Bouillon Insights: I highly recommend keeping Better Than Bouillon on hand; it adds incredible depth of flavor. This recipe specifically calls for the vegetarian beef flavor to enhance the tofu’s meatiness, but the generic vegetarian bouillon works perfectly well too. As an alternative, you can use a bouillon cube dissolved in water, or simply swap the water called for in the tofu sauce with vegetable broth for a rich base.
Storage Instructions: For optimal freshness and convenience, store each component (tofu, sweet potatoes, and street corn salad) separately in individual airtight containers in the refrigerator for up to 4 days. When ready to enjoy, gently reheat the tofu and sweet potatoes before assembling your bowls to maintain their texture and warmth.
