Brush or spoon a tiny bit of the reserved marinade over each piece (about ½ teaspoon per piece) for an initial burst of flavor. Bake for 20 minutes. Then, carefully flip the tofu pieces to ensure even cooking and browning on all sides. If desired, brush with a little more marinade for extra sauciness and flavor. Continue baking for an additional 10-15 minutes, or until the tofu is nicely browned, caramelized around the edges, and firm to the touch.

Instructions

  • Prep your tofu: Follow our directions HERE for how to press tofu and cut it into your desired shapes. Medium cubes work well, but feel free to experiment! Set aside.
  • Make the marinade: In a shallow dish, a large zip-top bag, or a reusable container, whisk together the marinade ingredients: olive oil, your favorite BBQ sauce, apple cider vinegar, minced garlic, onion powder, paprika, salt, and liquid smoke (if using). Whisk until everything is fully combined.
  • Add the tofu: Submerge your prepared tofu pieces into the marinade, ensuring they are well coated. Let it marinate for a minimum of 30 minutes, or for an even richer flavor, refrigerate and marinate overnight. Even a short marination time makes a significant difference. Remember to save any remaining marinade!
  • Bake: Preheat your oven to 425°F (220°C). Line a large baking sheet with a silicone mat or parchment paper. Arrange the marinated tofu pieces in a single layer, making sure not to overcrowd the tray. Spoon about ½ teaspoon of the reserved marinade over each piece. Bake for 20 minutes. Flip the tofu pieces, optionally adding a little more marinade, and bake for an additional 10-15 minutes, or until golden and caramelized.
  • Or pan fry: For pan-frying, heat 1 tablespoon of oil in a large non-stick skillet over medium-high heat. Add the tofu pieces in a single layer. Cook for about 15 minutes, flipping every few minutes until all sides are browned. For extra sauciness, toss in a few tablespoons of the reserved marinade during the last 2 minutes and cook until the sauce thickens and coats the tofu.
