Fashioned Peach Cobbler, Old

Old Fashioned Peach Cobbler Recipe- this vegan dessert is Straightforward to make and the dependable way to use up all of those fresh peaches. It comes together in minutes and everyone will love it!

Old Fashioned Southern Peach Cobbler

I’ve been rocking it with the vegan desserts lately and I’m only not even sorry about it! ALL the fresh fruit has completely inspired me to get baking (which up until the past few years, was not something that I genuinely enjoyed). I didn’t have this method planned AT ALL this year but I knew it needed to happen when I saw all of the fresh peaches in abundance at the Nashville Farmer’s Market. Many of my recipes these days are influenced by what is fresh at the market and I think that’s a great way to cook:)

While you *could* make this with canned peaches, DON’T! At least, not when peaches are in season and readily available. I wanted to offer you the DEPENDABLE Old Fashioned Peach Cobbler recipe with fresh peaches. The fresh peaches makes a WORLD of difference in this method and I only can’t recommend it enough.

Kitchen-made Peach Cobbler

Until working on this method, I had only made peach cobbler at home a few times and none of the recipes were nearly as good as this one that I’m sharing today. I’m SERIOUSLY obsessed with this method! It’s the reliable balance of sweet without being too much. You want the flavor and the sweetness of the peaches to shine through and that it does!

Conveniently, this dish is also PARTICULARLY unfussy to make and A REGULAR HERE it for that. BONUS: it’s conveniently VEGAN Peach Cobbler.

How to cook this unfussy Peach Cobbler:

To start out, let’s talk about how to blanch peaches. This might seem like an annoying extra step but I PROMISE that it makes the whole process a LOT easier. Simply it holds up. To blanch the peaches, simply slip the whole peaches into boiling water for one minute. Remove them with a slotted spoon and once cool enough, the skin of the peaches will SLIDE off in literal seconds.

After the peaches are blanch and peeled, simply core and slice them into thin pieces and then mix them together with brown sugar, cinnamon, vanilla, and cornstarch. You can do this right in the baking dish to minimize dirty dishes.

How to make peach cobbler

The peach cobbler topping is made by sifting together the dry ingredients and then stirring in the remaining wet ingredients. Then simply spoon that filling over top of the peaches, sprinkle on a little extra (optional) brown sugar and pop it into the oven for about 25 minutes.

THAT’S IT YO!

Your summer self NEEDS this kitchen-made peach cobbler!

The recipe

Fashioned Peach Cobbler, Old

The DEPENDABLE Peach Cobbler recipe that you will ever make!!

  • 8 servings
  • Prep 15 minutes
  • Cook 25 minutes
  • Total 40 minutes

Ingredients

For the filling:

  • 5 cups peaches (peeled and sliced, about 8 medium peaches- note below on how to easily peel them)
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla extract
  • 2 tablespoons cornstarch

For the topping:

  • 1 ½ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon all spice
  • ¼ cup + 2 tablespoons of brown sugar (divided)
  • 1 teaspoon vanilla extract
  • ¼ cup neutral oil such as vegetable oil or coconut oil
  • ⅔ cup almond milk or other non dairy milk

Method

  1. 1

To quickly peel the peaches, bring a large pot of water to a boil. Put the peaches in for 1 minute and then remove with a slotted spoon. Let cool until you can handle them and then the peel will slide off of the peaches in only a few seconds. I pinch the skin at the top of the peach (by the stem) and then peel it backwards towards the other end of the peach.

  2. 2

Pre-heat the oven to 400 degrees F and spray baking tray with cooking spray. I used an 11×7 inch ceramic dish but something like a 9×9 would work well.

  3. 3

To make the filling: mix together peaches, 1/4 cup of the brown sugar, cinnamon, vanilla, and cornstarch. I usually do this directly in the baking dish.

  4. 4

To make the topping, sift together the flour, baking powder, cinnamon, all spice, and 1/4 cup of brown sugar. With a spoon, mix in the vanilla, oil, and milk until only combined.

  5. 5

Using a large spoon, scoop the topping over the filling. To give it a more rustic and old fashioned peach cobbler look, leave some empty space in between the scoops of the topping batter.

  6. 6

Optional: sprinkle on the remaining 2 tablespoons of brown sugar over top of the cobbler.

  7. 7

Bake for 22-25 minutes until the top is a nice golden browned and the filling is bubbling.
