These Gingerbread Cupcakes are simple to make and fully vegan!

Ingredients

Dry Ingredients:

  • 1 ½ cups all purpose flour
  • ½ cup dark brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ tablespoon cinnamon
  • ½ tablespoon ground ginger
  • ½ teaspoon all-spice
  • ½ teaspoon nutmeg
  • ½ teaspoon ground cloves

Wet Ingredients:

  • 5 tablespoons Country Crock Plant Butter, melted
  • 1 tablespoon apple cider vinegar
  • cup molasses
  • ½ cup plant based milk

Frosting:

  • 3 ½ cups Powdered Sugar
  • 1 cup 2 sticks of Country Crock Plant Butter
  • 1 tablespoon Molasses
  • ¼ teaspoon Ground Ginger
  • 1 teaspoon vanilla extract
  • ½ tsp cinnamon
  • 1 tablespoon plant based milk

Instructions

  • Pre-heat your oven to 350 degrees F (175°C). Line a cupcake tin with paper liners and, for extra non-stick insurance, lightly spray the inside of the liners with cooking spray.
  • In a large mixing bowl, thoroughly whisk together all the dry ingredients: all-purpose flour, dark brown sugar, baking soda, salt, cinnamon, ground ginger, all-spice, nutmeg, and ground cloves. Ensure they are well combined to prevent clumps of spice in your final cupcakes.
  • In a separate medium bowl, whisk together the wet ingredients: melted Country Crock Plant Butter, apple cider vinegar, molasses, and plant-based milk. Once combined, pour the wet mixture into the bowl containing the dry ingredients. Mix gently until just combined. It is crucial not to overmix this batter; overmixing can incorporate too much air, leading to dense cupcakes or causing them to sink after baking. A few small lumps are perfectly acceptable.
