Ingredients for strawberry juice:
Simply 3 simple ingredients and you’re well on your way to sweet, savory strawberry juice!
- Strawberries. The key ingredient for this handsome juice! You can use fresh or frozen.
- Sugar. I usually use about ½ cup of sugar, but if you know that you might want it a little less sweet, you can start with ⅓ cup and add a little more later as desired.
- Water. This is the liquid base of the juice.

How to make strawberry juice:
Get ready for the most unfussy recipe ever!
- Combine & simmer ingredients. In a pot over medium heat, combine ingredients and bring them to a quite gentle simmer.
- Cook. Stir frequently and cook for about 8 to 10 minutes.
- Strain. With a fine mesh sieve, strain the strawberry mixture into a clean bowl. Use a spatula to gently press the strawberries down to remove all of the juice. Once all of the juice has been strained out, discard the strawberries.
- Cool and enjoy. Let cool before using and store in an airtight container in the fridge for up to about 2 weeks.

Speedy tips:
- I’ve seen recipes that skip the cooking process of the strawberries, but I do NOT recommend this. I’ve tried it both ways and the flavor + consistency is SO MUCH better if you simmer the strawberries first. The cooking process genuinely brings out a lot of the juice and flavor, and I know it’s an extra step, but I promise it’s worth it!
- Taste your strawberries before making the juice. If they’re more tart than sweet, add some extra sugar. If they’re fairly sweet to begin with, reduce the sugar and then taste test at the end to see if you need to add a bit more.
- Feel free to sub out the strawberries with another go-to fruit, like blueberries, cherries or raspberries.
Can you use frozen strawberries for strawberry juice?
Yes! You can make this juice even in the winter when fresh strawberries aren’t as sweet and savory by using frozen strawberries.
Unless you thaw them first, you may need to increase the cooking time. I usually thaw them in a large bowl at room temperature. Any excess liquid in the bowl can be added to the pot with the strawberries. Your juice will taste simply like it was made with fresh berries!

Ways to use this juice:
There are so many uses for strawberry juice from treats to drinks to breakfast. Here are some of our go-to ideas:
- Pancakes, waffles, French toast. Top our regular pancakes, waffles or this French toast with strawberry juice.
- Yogurt. Stir some strawberry juice into your regular yogurt.
- Frozen yogurt. Worth keeping buying frozen vanilla yogurt or ice cream and stirring the strawberry juice into it when it’s slightly softened.
- Oatmeal. Make a batch of oatmeal and stir this juice in!
- Milk. Mix it into milk to make flavor-packed strawberry milk. Yum!
- Cocktails/Mocktails. Make fun, festive mixed drinks with good strawberry flavor.
Does strawberry juice need to be refrigerated?
Yes! Kitchen-made strawberry juice does need to be refrigerated to stay fresh. It is not shelf-stable.
How long does strawberry juice last?
Once completely cool, store juice in an airtight container in the fridge. It will keep well for about 2 weeks. You can also store the juice in the freezer for 6 months. To thaw, place the juice in the refrigerator overnight. You can also place the frozen sealed container of juice in a bowl of lukewarm water for about 30 minutes.
