I find it most effective to do my grocery shopping on the same day that I plan to meal prep. This minimizes the risk of ingredients getting lost in the “abyss” of my fridge and ensures everything is fresh and ready for action. Dedicate a couple of hours on a Sunday, or whatever day works best for you, and watch how much smoother your week becomes!

Throughout this plan, you’ll see two key meal prep approaches:

  • Make it Ahead: This strategy involves preparing the entire dish or major components of a recipe in advance. It’s perfect for stews, sauces, or roasted vegetables that hold up well and often taste even better after a day or two.
  • Component Prep: This method focuses on preparing individual ingredients like chopping vegetables, mincing garlic, or cooking grains. By having these basic building blocks ready, you can quickly assemble fresh meals during the week with minimal effort.
  • Green Goddess Veggie Bowls
    • Make it ahead: These bowls are excellent for making ahead! Roast all your chosen vegetables (like cauliflower, potatoes, and radishes as suggested, or other favorites) and allow them to cool completely. Blend the vibrant green goddess sauce and store it in a separate airtight container. Keep the roasted veggies and sauce refrigerated for up to 4 days. When ready to serve, simply warm the vegetables if desired, or enjoy them cold, and assemble your bowls with the fresh sauce.
