Life is full of milestones and moments worth celebrating, and few occasions are as special as a significant birthday. This weekend marks one such joyous event: Stephen’s 30th birthday! While the concept of turning thirty might evoke a playful sense of ‘getting old’ for some (myself included, with just over a year to go until I join the club!), it’s truly a wonderful opportunity to reflect on past adventures and look forward to new ones.
Our celebrations kicked off early, setting a high bar for the weekend. Thursday evening saw us revisiting the very restaurant where we held our wedding reception – a nostalgic trip down memory lane. The highlight, however, was attending a talk by the renowned astrophysicist Neil deGrasse Tyson. It was an impulsive decision that paid off tremendously; his ability to make complex cosmic wonders accessible was absolutely captivating. For anyone unfamiliar with his work, I highly recommend checking out “Cosmos” on Netflix – it’s an incredible journey through the universe.
A few of the more intricate space concepts went over my head, but I’m proud of how much I absorbed! My main distraction, amusingly, was observing that Dr. Tyson had taken off his shoes as soon as he stepped on stage, delivering his entire profound lecture barefoot. It was a delightful quirk that added to the unique experience.
The birthday festivities are set to continue with a packed schedule: indulging in delicious food, potentially a Star Wars movie marathon (yes, I confess, I haven’t seen them all!), a lively night out with friends, and a celebratory lunch with family on his actual birthday. It’s shaping up to be a truly memorable transition into a new decade.
Embracing Winter’s Chill with the Ultimate Comfort Food: Slow Cooker Chicken Noodle Soup
Beyond the personal celebrations, there’s a shift in the air signaling the arrival of winter in Nashville. Just yesterday afternoon, we enjoyed unseasonably warm temperatures nearing 70 degrees – the kind of mild autumn I adore. But this morning, a distinct chill has settled in, making it undeniably cold by my standards. And what better way to welcome the colder months than with a hearty bowl of soup? Luckily, my kitchen is currently stocked with about ten different varieties, including this incredibly easy and comforting Slow Cooker Chicken Noodle Soup!
It might surprise you, but this recipe marks my first true slow cooker creation featured on the blog. This seems particularly odd given that I own no less than three crockpots and use them with remarkable regularity! The truth is, slow cooker meals can be notoriously tricky to photograph beautifully, and I’ve often felt intimidated by the challenge of making them look as appetizing in pictures as they taste in real life. However, I’m committed to improving this skill, as I have many more slow cooker recipes planned for the future. There’s simply no denying the convenience and magic of letting a meal simmer to perfection while you go about your day.
The Simplicity of Slow Cooking: Crafting the Perfect Chicken Noodle Soup
As you might expect from a slow cooker recipe, this chicken noodle soup demands minimal effort for maximum flavor. The beauty of it lies in its ‘set it and forget it’ nature. All the foundational ingredients – the tender chicken breasts, aromatic carrots, crisp celery, sweet onion, earthy rosemary, pungent garlic powder, a touch of salt, rich chicken or vegetable broth, and a hint of extra virgin olive oil for added depth – are combined directly into the crockpot. These ingredients then meld together, slow-cooking for several hours to create a deeply flavorful broth and incredibly tender chicken.
About an hour before you’re ready to serve this comforting dish, the cooked chicken is carefully removed from the slow cooker. This allows for easy shredding or dicing into bite-sized pieces. For peak efficiency and a touch of ingenious laziness, I swear by this process of shredding chicken in a stand mixer. It’s a game-changer for speed and consistency, transforming a tedious task into a quick one.
Once shredded, the chicken returns to the slow cooker, followed by the wide egg noodles. A crucial tip for optimal enjoyment, especially if you anticipate having leftovers, is to cook the noodles separately and add them to individual servings just before eating. This simple step prevents the noodles from becoming overly soft or soggy upon reheating, ensuring they retain their desired texture. While the soup remains delicious regardless, this method guarantees the best possible experience, maintaining that perfect balance of tender chicken, al dente noodles, and rich broth.
My personal touch for this soup, born from a deep obsession, is to add a generous dose of fresh parsley just before serving. Its vibrant green color and fresh, herbaceous notes elevate the flavors beautifully. Then, I ladle it into the largest bowl I can find, ready to savor every spoonful of this homemade goodness. This easy Slow Cooker Chicken Noodle Soup isn’t just a meal; it’s a warm hug in a bowl, perfect for warding off the winter chill and nourishing the soul.
Here’s to many more comforting, fuss-free soups being made in my collection of crockpots throughout the coming colder months. It’s truly an indispensable tool for creating delicious, wholesome meals with minimal effort, allowing more time for celebrating life’s special moments, big or small.

Chef’s Note: For Best Leftovers
If you intend to save some of the soup for reheating at a later time, we highly recommend cooking the noodles separately on the stovetop and adding them to individual servings of soup just before eating. This prevents the noodles from becoming soggy and ensures a perfect texture every time you enjoy your delicious leftovers.
