Here’s a fresh weekly meal plan featuring several new and updated recipes I’m excited to share. The Tofu Stir Fry has been on repeat in my kitchen — we love it every time.

Meal Prep Tips:

I usually shop on the same day I meal prep — otherwise ingredients tend to wander to the back of the fridge. Below are quick make-ahead and component prep ideas to speed up weeknights.

  • Veggie Chow Mein
    • Make it ahead: Whisk the sauce and keep it in a jar in the fridge — it lasts all week. You can julienne carrots and chop broccoli and bell pepper up to 2 days ahead. Night of, this is a 15-minute dinner.
    • Component prep: Whisk the sauce (soy sauce, hoisin, rice wine vinegar, brown sugar, cornstarch, sesame oil, hot water) and store in a jar. Prep the vegetables so they’re ready to toss in the skillet.
  • Tempeh Tacos
    • Make it ahead: The tempeh filling stores well for up to 4 days and reheats quickly in a skillet with a splash of water. You can also double and freeze half for up to 2 months.
    • Component prep: Dice the onion and mince the garlic. Measure spices into a small bowl so they’re ready to add.
  • Tofu Stir Fry
    • Make it ahead: The stir fry keeps for up to 4 days — reheat in a skillet over medium heat to revive the tofu. The tofu softens a bit as it sits in sauce but remains tasty.
    • Component prep: Press and cube the tofu the night before and let it sit on a paper towel-lined plate for extra crispiness. Whisk the sauce and slice vegetables ahead; they cook straight from the fridge.
  • Creamy Tomato Pasta
    • Make it ahead: The sauce keeps for up to 4 days — reheat gently with a splash of milk or reserved pasta water. Cook fresh pasta the day you serve.
    • Component prep: Blend silken tofu with milk until smooth and refrigerate. Dice shallot and mince garlic so day-of it’s just sautéing and tossing together.
  • Chickpea Curry
    • Make it ahead: This is a perfect make-ahead meal — it improves after a day. Keeps up to 5 days in the fridge and freezes well. Reheat gently with a splash of broth.
    • Component prep: Cube sweet potato, cut cauliflower into florets, slice carrots and bell pepper, and mince garlic. Store together and add straight to the pot.
