One Pan Salmon and Squash with Couscous

A quick and beautifully flavored one-pan meal featuring salmon, butternut squash, chickpeas, and fluffy couscous.

Ingredients

  • ⅔ cup pearl couscous (giant/pearl)
  • 1 medium butternut squash, peeled and diced into 1-inch pieces
  • 2 tablespoons oil (such as olive oil)
  • 14 ounce can diced tomatoes, drained
  • ½ cup vegetable broth
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • ½ teaspoon ginger
  • ½ teaspoon turmeric
  • ½ teaspoon cumin
  • ¼ teaspoon cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon cloves
  • ¼ teaspoon cayenne pepper
  • 2 cloves garlic, finely minced
  • 14-15 ounce can chickpeas, drained and rinsed
  • 1 cup baby spinach (a large handful)
  • 4 salmon fillets (approximately 6 oz each)
  • ¼ cup fresh cilantro, chopped (for topping)

Instructions

Stir in the drained diced tomatoes, finely minced garlic, and vegetable broth. Sprinkle half of the prepared spice blend over the mixture and toss again to ensure everything is evenly coated.
  4. Bake in the pre-heated oven for 20 minutes, or until the squash begins to soften.
  5. Remove the tray from the oven. Stir in the drained chickpeas and fresh baby spinach. Gently place the four salmon fillets on top of the vegetable and chickpea mixture. Sprinkle the remaining half of the spice blend evenly over the salmon fillets and the entire tray.

  8. Once the salmon and vegetables are done, carefully remove the baking tray from the oven. Transfer the cooked salmon fillets to a separate plate.
  9. Add the cooked couscous and most of the fresh chopped cilantro to the squash and chickpea mixture on the baking tray. Stir everything together gently to combine, allowing the couscous to absorb the delicious pan juices.
  10. Divide the couscous and vegetable mixture evenly among four plates. Top each serving with a salmon fillet. If desired, sprinkle with a bit more fresh cilantro for garnish.
