Ingredients

  • 1 ¾ cups organic cane sugar or granulated sugar
  • ¾ cup cocoa powder
  • 1 teaspoon baking powder

  • 1 teaspoon espresso powder
  • cup melted coconut oil, get unrefined if you want it to be virtually tasteless, vegetable or canola oil also work
  • 1 ½ tablespoons apple cider vinegar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 ½ cups milk, any kind works here (tested with almond milk and regular dairy milk), at room temperature*
  • ½ cup unsweetened apple sauce, at room temperature*

For the frosting:

  • ½ cup unsalted butter, at room temperature (vegan as desired)
  • 2 cups confectioners’ sugar
  • ½ teaspoon peppermint extract
  • 2 tablespoons milk of choice
  • Crushed peppermint for garnish
  • Natural Delights Truffles for garnish

Instructions

  1. Preheat your oven to 350 degrees F (175°C). Line 2 cupcake tins (this recipe makes roughly 18-20 cupcakes) with paper liners and lightly spray the inside of each liner with cooking spray for easy release.
  2. In a small bowl or a liquid measuring cup, stir together the apple cider vinegar and milk of your choice. Let this mixture sit for 5-10 minutes until it slightly curdles; this creates a homemade “buttermilk” which adds tenderness to the cupcakes. Set aside.
  3. In the large bowl of a stand mixer fitted with the paddle attachment (or use a large bowl with an electric hand mixer or even a sturdy whisk), combine all the dry ingredients: all-purpose flour, organic cane sugar or granulated sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder. Whisk them together thoroughly until well combined and lump-free.
  4. Pour in the wet ingredients: the melted coconut oil (ensure it’s cooled slightly), the prepared milk/apple cider vinegar mixture, vanilla extract, almond extract, and unsweetened apple sauce. Mix on low speed until the ingredients are just combined. Be careful not to overmix the batter; mix until no streaks of dry ingredients remain, scraping down the sides of the bowl as needed to ensure everything is incorporated.
  5. Evenly divide the cupcake batter among your prepared cupcake liners, filling each approximately three-quarters of the way full. This recipe typically yields around 18 to 20 cupcakes, depending on how much you fill each liner.
  6. Bake for 20-22 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean, indicating they are fully baked. Once baked, remove the tins from the oven and let the cupcakes cool in the tins for a few minutes before transferring them to a wire rack to cool completely. It’s essential that the cupcakes are completely cool before frosting.
  7. While the cupcakes are cooling, prepare the peppermint buttercream frosting. Add the room temperature unsalted butter (or vegan butter) to the bowl of a stand mixer (this can also be done with a powerful hand mixer). Cream the butter on medium-high speed for about 2 minutes until it becomes noticeably lighter in color and smooth.
  8. Gradually add the confectioners’ sugar to the creamed butter, mixing on low speed until mostly combined, then increase to medium-high. Add the peppermint extract and 2 tablespoons of your milk of choice. Beat on medium/high speed for a full 2 minutes until the frosting is light, fluffy, and airy. If a thinner consistency is desired for piping, add more milk, one teaspoon at a time, until it reaches your preferred texture.
  9. Once the cupcakes are completely cool, pipe the luscious peppermint buttercream frosting onto each one using your preferred piping tip.
